"Daiquiri La Glacerie" Cocktail with b'Lure

This cocktail is named for the 1st Ice House in New Orleans.

Glass Used: Frozen Daiquiri Glass


¾ oz Bayou Satsuma Liqueur

¾ oz Plantation Pineapple Rum

¼ oz Lucky Falernum

¼ oz Plantation Original Dark 73%

1.5 oz Perfect Purée Yuzu Luxe Sour

5 ml Wild Hibiscus Company B'Lure Butterfly Pea Extract

(NOTE: Sugar must be increased in a slushy machine, draft or bulk cocktail, so plan to add 5% simple syrup to taste for a bulk version)


Combine all ingredients. Best if you let them hang out and get to know each other overnight in the fridge.


Shake ingredients and strain over crushed ice in a chilled glass


Add enough ice to cover the liquid. Puree.


Add 1.5 Ounces Water and Turn Machine on (will need to be a multiple batch for most machines to work - see note about volume adjustment with sweetness)


A few dashes of Fee West Indian Orange Bitters, a Lime Wheel and a Cocktail Umbrella


Having grown up in south Louisiana, I have always had a special place in my heart for Satsumas, so I started with the Bayou Satsuma Liqueur, made with Louisiana Sugar Cane rum and fresh Satsumas. Continuing with a natural inspiration, I then added Plantation Pineapple made with two infusions, a lower proof and a high proof infusion, one with fruit, one with whole fruit and skin, one for 3 days, one for several weeks making a remarkably complex pineapple rum. Next, it needed some, ahem, balls/gusto/guts/hootspah...so in comes the gorgeous 146 Proof Plantation Original Dark Rum. Keeping with the inspiration of a classic Daiquiri being the best rum you can get your hands on and a perfectly balance of sweet and sour, I finish with Perfect Puree Yuzu Luxe Sour, an uber balanced and complex sour thanks to Japanese Orange (plays well with the Satsuma), fragrant Kaffir Lime and bright key lime, all 100% real, ripe and year-round thanks to a frozen Perfect Puree product.

Finally, frozen is all about FUN, so a few drops of Wild Hibiscus Company B'Lure Butterfly Pea Extract for a dramatic Purple Color (turns purple due to the natural acidity in the Daiquiri) and a cocktail umbrella.
